Georgia Southern Collards are a cabbage-like vegetable that delivers plenty of gigantic and nutritious leaves. They’re delicious in soups and stews or cooked as a side vegetable (and covered with bacon) like spinach.
Georgia Southern Collards are even mild enough to pick young and add to slaws and salads.
Resistant to bolting and high in vitamins, it’s also great for canning and freezing.
Best of all, the more you harvest, the more it grows. Remove the bottom leaves and let the top continue to grow through the winter and spring for months of abundant harvests.
Collards are the foundational leafy green for Zones 8-11 and a welcome addition to Southern cooking, Soul Food, and Cajun cuisine.
Georgia Southern Collards are one of the varieties recommended by the University of Florida Ag Dept for growing throughout Florida.

TIPS FOR GERMINATION
For best results, sow seeds in cells or soil blocks about 6-8 weeks before planting out in the fall or early spring. Use a light seed sowing mix and plant seeds about 1/4 inch deep.
