Bok choy, sometimes called Pak Choy, is a crisp and delicious Asian cabbage that is more heat tolerant than more traditional varieties.
This Tall White Stem Bok Choy variety is great for stir fry, kimchi (pickling), or slaw.
You can harvest small at 30 days for fresh salads or give it 45-60 days to form tall stems and a fuller head of greens for cooking.
Since bok choy matures quickly and grows all winter long (even through light frost), we recommend sowing in succession.

Bok Choy Growing Instructions
For best results, sow seeds in cells or soil blocks about 4-6 weeks before planting out.
Use a light seed sowing mix and plant seeds about 1/4 inch deep.
Keep soil moist with misting or bottom watering until germination.
Keep moderate temperature at about 60°F to 70°F if possible.
Germinates in approximately 5 to 10 days.
Plant into a prepared garden bed spacing about 15-18 inches apart.
Provide with a slow-release organic fertilizer to help plant establish.
Keep soil moist during the first week after planting out and then provide at least 1 inch of water per week or as required by your local conditions.
Mulching the root zone will help to retain moisture.
Feed plants diluted nitrogen-rich fertilizer once during active growth if desired.
